"In the fast world of today we are all searching for our own identity. An important component of this is the past, the lost time. Through memories time is never lost: the experience can be relived, resensed, retouched upon and is forever a part of our dreams of what we are and who we desire to become.
The composition of my menu has been created from my own journey into my memories and history. Sensual nostalgia led me to return to forgotten taste sensations that were experienced in my childhood.
These are the elements that remind me and turn me into the person I am today: cinnamon, anise, pepper, note nutmeg and mace. These are the flavours I have translated to the present. For this I have used the inspiration of the past, but the techniques of today. And the passion of all times."
